The concept of a restaurant, which specialized in roast chicken, was expanded to include an on-site carving station featuring rib-eye roast, roast pork, and baby back ribs plus American side items such as mashed potatoes, green beans casserole, and garden-fresh vegetables. The menu, which reflects the melting pot cultures unique to Hawaii, appeals to Asian, Pacific, and American tastes. The first Lahaina Chicken Company opened in 1999 at the Ala Moana Center Makai Food Court.

Specialties include homestyle Roast Chicken and Rib-Eye Roast. Plump, five-pound chickens are seasoned with five secret spices, then roasted not broiled in a rotisserie. Roasting keeps the chicken and meats moist and flavorful. The roast chicken is available whole or in one-quarter and one-half combination meals. Fried chicken is also featured on the menu as combination meals or 8-piece and 16-piece orders. Lahaina Chicken Company carves its chicken, beef, and ribs to order right in front of the customers’ view similar to what is done in quality buffet operations. This is a rare treat in a fast-food restaurant.
